Royal Vanilla Meringue Cake
A classic cake; one that wins the hearts of many and is sure to leave your dinner party guests talking. Our Royal Vanilla Meringue cake consists of smooth Swiss meringue and four layers of thinly sliced cake. Each layer is separated by incredibly fluffy vanilla bean cream with hints of custard flavour. We've topped this cake with a perfectly frothy meringue, lightly torched and browned to roasted perfection.
There is a common misconception that all meringues have “eggy” aromas and can be overly sweet. The Saffron Café utilises a slightly altered Swiss meringue meticulously heated to its optimal temperature. The cake is crafted into a delicious featherweight texture with no unpleasant aftertaste.
Best enjoyed chilled. When refrigerated this cake can last 3-4 days. Our eggs used are entirely organic and free range. We only utilise fresh unbleached organic flour.
